Rack O' Ribs

                                You can't go wrong with a rack of mouthwatering pork ribs baked for a couple of hours until the meat starts falling off the bones and then topped with some bbq sauce and baked for another 30 minutes. If you are a guy or have guys in your house these are sure to be a big hit.


Ingredients:
Rack of pork ribs
1/2 cup of brown sugar
2 tablespoons of diced garlic
4 tablespoons of of salt
4 tablespoons of black pepper
2 tablespoons of dried oregano leaves
4 tablespoons of dried parsley flakes
3 tablespoons of dried rosemary
2 tablespoons of dried thyme
BBQ Sauce


 Directions:
            Rinse ribs and pat dry with some paper towels. Line a baking sheet with aluminum foil and preheat oven to 375 degrees F. In a large bowl add Thyme, Salt, Pepper, Rosemary, Garlic, Parsley, Brown Sugar, and Oregano, mix well. Take the mixture and rub both sides of the ribs. Place ribs on the foil lined baking sheet and cover ribs with more foil and place into oven on the middle rack. Bake ribs for two hours.After two hours  remove top foil add bbq sauce (recipe coming soon)  and place baking sheet on top rack for another 30 minutes remove from oven. Serve.

Meatballs with spicy mustard sauce

                   There are no words to tell you how good these are. Try them for yourself,  you will not be disappointed.
Ingredients:
1/2 lb ground beef
1/2 lb ground turkey
1 small white onion (diced)
1/2 green bell pepper (diced)
1/2 cup Italian Bread Crumbs
1/2 cup chopped parsley
1 large egg
2 garlic cloves (finely chopped)
Salt and pepper
1 cup of canola oil



Directions:
In a large bowl, add ground beef and ground turkey.  Add onions, parsley, green pepper, garlic, bread crumbs, and egg.  Using hands, mix well, without over working the meat, or the meatballs will come out tough and dry.  Season with salt and pepper.  Take meat and form into balls. add canola oil In a large deep skillet, over a medium heat. Fry meatballs in batches. When the meatball is brown and slightly crisp. Remove from the heat season with salt and drain on a paper towel. 
                                          Serve theses meatballs with some spicy honey mustard sauce. This sauce is so simple to make all you need is, 2 tablespoons of honey, 2 tablespoons of  mustard and 2 1/2 tablespoons of hot sauce, mix well in a small bowl and eat with the meatballs.      Bon Appetit

Funfetti Pineapple Cherry chocolate chip cake with pineapple chocolate sauce

                                     This funfetti cake is so moist and flavorful you'll love it!




 2 Cups of sugar
 4 eggs
 3 cups  all-purpose flour
 1/2 cup milk
 3/4 cup vegetable oil
 2-1/4 teaspoons baking powder
 1 teaspoon Raspberry extract
 2 20 oz cans of Crushed Pineapples in juice
 4 cups of milk chocolate chips
 2 cups of multi colored sprinkles
1 small Jar of maraschino cherries


  Preheat oven to 350 degrees F. Line two 9-inch  round cake pans with parchment paper. Grease the paper and the sides of the pan well.In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute. Add flour, milk, oil, baking powder, 1 can of crushed pineapples Raspberry extract, 3 cups of chocolate chips, maraschino cherries and beat for another minute, just until the batter is smooth and creamy (Don't over beat) add sprinkles .  Pour batter into the prepared baking pans .Bake in preheated oven for 30 to 40 minutes or until  a toothpick poked into the center comes out clean. place cakes on a rack and peel off the paper. In a sauce pan on low heat add the last can of crushed pineapple and the remaining Chocolate chips. Stir until chocolate is melted pour over cakes.

Baked Penne Bacon In Cheese

       Baked Penne Bacon In Cheese is creamy, flavorful and delicious. It's like having a part of heaven on Earth.   I really love the crunch of the bacon and the bread crumbs and also the heat of pepper Jack cheese.
        Bacon and cheese lovers will enjoy every last bite, so give it a try...

Ingredients:        
16 oz of Penne pasta 
1/2 cup of Milk
1/2 cup of heavy cream
4 tbsp of butter
4 cups of Shredded Pepper jack Cheese
3 cups of Shredded Sharp Cheddar Cheese
1 cup of Italian bread crumbs
15 pieces of cooked Bacon crumbled
Salt and pepper

Preheat oven to 350 degrees. Cook penne according to package. In large pot over a medium heat add milk, butter, and heavy cream and bring to a slight boil. Add 3 1/2 cups of pepper Jack and 2 1/2 cups of cheddar  cheese to the pot and stir until you have a creamy cheese sauce. Add pasta and bacon season with salt and pepper and mix until sauce covers all the pasta. Add pasta to casserole dish and top with remaining cheese and bread crumbs. Place dish in oven and bake for 30 to 45mins or until golden brown.   Remove from oven  and serve hot. Enjoy
